Most South African enjoy a braai , at home or on holiday. There’s always wood or charcoal to get the fire started. Toast Coetzer who works as a travel journalist for Weg and Go! Writes about the kuiervuur, a fire where friends gather and a braai fire, which is a bit different but also for friends. While Lintvelt says she was born to braai, recalling her childhood in Calvinia, where Sunday braais after church was a tradition as were their cook-outs in the Tankwa Karoo, crayfish braais on the West Coast and potjies on hunting trips to the Nothern Cape when her parents made biltong and boerewors for the coming year.
The book is a compilation of her favourite recipes from the past seven years as food editor of Weg/Go!.
You do need electricity for some of the dishes as many readers escape the routine of life to self-catering cottages, to their seaside cottages, or stay at home.
There are seven chapters: Man Makes Fire, Born To Braai, On The Braai, In The Pan, In The Potjie, On The Side and Bakes and Braaibroodjies.
Lintvelt has included easy-to-braai Steak and Chips with Rosemary Salt, with clear step-by-step instructions; a Creamy Prego Sauce that also goes well with chicken; Steak with Cocoa and Chilli and a T-bone with Sriracha-and-roasted garlic butter. Others are Prego Ribs or a Pork Roll with Couscous.
In the chapter In The Pan there are recipes for Sweet Potato Hash with Eggs; Indian Eggs or Mussels in Tomato Butter, to name some.
You will learn how to cook Slow-Cooked Lamb Shank, Oxtail or Pork Shoulder, and more in the section In The Potjie. There are a host of tasty-sounding dishes in On The Side and include Chicken-and-Mealie Fritters; Fried Mealie Pap with Bacon Smoor ; Haloumi Kebabs; a Sweet Potato Salad as well as a selection of sauces and braai salt and a Mielie Pickle. Bakes and Braaibroodjies is self-explanatory and you will find recipes for Pan-fried Bread; Cheese and Pork Muffins; Oats Flapjack Mix, and if you have a sweet tooth French Toast with Condensed Milk Butter or a Banana Bread, should satisfy the craving.
Go! Braai Time will prove to be a useful addition to your cookery collection, especially if you want to extend your expertise beyond pap and wors.
