The Italian Charmat method used to produce Prosecco involves a second fermentation in steel tanks while Champagne and Cap Classique involve a second fermentation in the bottle. Easy to drink and easy on the pocket, Prosecco is made to be drunk fresh, unlike Champagne which usually improves with bottle maturation.
